Our jerky is made in small batches from USDA grade top round then smoked for 8 hours or more at 155 degrees. In fact, to ensure freshness we usually do not make your jerky until your order is placed. We also work very closely with the USDA on a daily basis to make sure that all of our product shipped meets or exceeds Hazzard Analysis and Critical Control Point guidelines.

Right now our jerky is available in four delicious flavors: Original, for those classic, peppered western jerky fans; Teriyaki, for those of you who enjoy a touch of sweetness with your jerky; Hot, the original recipe with the zip that cayenne pepper gives and O'l Mexico, the latest addition to our jerky line.
